WATERMELON & HEIRLOOM TOMATO SALAD

Summer in a bowl! This salad was so easy to whip up and is too delicious not to share.

Mmm 😋 I don’t know about you, but I gravitate towards light and refreshing dishes in the Summer. 😋

I whipped up this Watermelon & Heirloom Tomato salad recently, and it HIT THE SPOT 😋 🤤


Ingredients

  • I made a simple white balsamic vinaigrette with the following ingredients:

    • Whisk 1/2 cup olive oil, 1/4 cup white balsamic vinegar, 1/2 teaspoon (or more to taste) lemon pepper seasoning, a squeeze of lemon, and a 1/2 teaspoon of dijon mustard together in a bowl until smooth.

  • Burrata Cheese

  • Butter Lettuce

  • Basil

  • Cucumber

  • Pistachios


METHOD

This is super simple and you’ll be eating in minutes. Simply:

  1. Chop the veggies

  2. Throw into a bowl

  3. Add the vinaigrette

  4. Sprinkle Pistachios on top

  5. Enjoy!

This was an epic combo of delicious ingredients!

Plus, both 🍉 and 🍅 are excellent sources of lycopene.

What’s great about Lycopene?

It has antioxidants and has been shown to reduce cancer and cardiovascular disease risks.
